Stunningly Beautiful & Delicious Matcha Cakes That You NEED To Try!!!

 

Matcha cakes - fluffy, nutty, and earthy at the same time. A Matcha cake is without a doubt a perfect recipe to bring to any occasion in any season! 

Of course, I love everything Matcha, but more than anything I love unique and stunningly beautiful culinary creations. Hungry for a slice of Matcha cake, I have found four different recipes that are more than just cakes - they are peices of art! Explore which recipe you like the most - or add your own twists! (Disclaimer: all of the pictures and recipes belong to the respective bloggers!) 

1) Raspberry Matcha Celebration Cake (Gluten-free & Vegan)

What is Great About This Recipe:

Ingredients: 

  • 100g ground almonds (1 cup)

  • 70g brown rice flour (1/2 cup)

  • 50g oat flour (1/2 cup)

  • 30g arrowroot (1/4 cup)

  • 100g rapadura sugar (3/4 cup)

  • 1tsp baking powder

  • 1tsp bicarbonate of soda

  • pinch of sea salt
     

  • 1tbsp matcha powder

  • ½ lemon, zest

  • 2tbsp ground flaxseed+6tbsp water

  • 80ml olive oil (1/3 cup)

  • 150ml almond milk (1/2 cup+2tbsp)

  • 1tbsp lemon juice

    Raspberry chia jam:

  • 200g frozen raspberries (2 cups)

  • 2tsp lemon juice

  • 2tbsp maple syrup

  • 2tbsp chia seeds

    Coconut frosting:

  • 1x 400ml can full fat coconut milk, refrigerated overnight

  • 250g coconut yoghurt (1 cup)

  • 2tsp maple syrup (optional)

  • ½tsp matcha powder

  • 2-3tsp raspberry powder

2) Chocolate Zucchini Layer Cake with Matcha Cream Cheese Frosting {gluten-free}

Ingredients:

Cake

  • 1 pound (550 g) zucchini

  • 2 cups (430 g) packed organic light brown sugar

  • 4 large eggs

  • ½ cup (120 ml) sunflower oil or other neutral vegetable oil

  • ½ cup (120 ml) whole milk

  • 2 teaspoons (20 ml) vanilla extract

  • 1 ½ cups (120 g) Dutch-process cocoa powder

  • 1 ¾ cups (230 g) sorghum flour

  • ½ cup (80 g) sweet white rice flour

  • 1 tablespoon + 1 teaspoon (16 g) baking powder

  • 1 teaspoon fine sea salt
     

  • Frosting

  • 1 pound (550 g) cream cheese, softened

  • 8 tablespoons (115 g) unsalted butter, softened

  • 1 ¾ cups (200 g) powdered sugar

  • 2 tablespoons + 1 teaspoon (12 g) good-quality culinary-grade matcha, plus a sprinkle for garnish

  • 1⁄4 teaspoon fine sea salt

  • chocolate discs or shavings and edible gold leaf, for decoration

3) Violet Tea Cake

What is Great About This Recipe:

  1. Super fluffy and soft! It almost melts in your mouth! 

  2. Simple & Easy to Make! 

  3. Deliciously Spongy!

Ingredients:

  • 35 g flour, 

  • 160 g sugar 

  • 4 eggs at room temperature, 

  • 40 g of butter, 

  • 65 ml of milk, 

  • approx. 12 g of tea matcha, 

  • a pinch of salt 
     

    Frosting:

  •  400 mL of whipping cream 30% 

  • 220 g cream cream cheese, 

  • 1/2 cup sugar,
     

  • Syrup:

  • 1 cup of boiled and cooled water or non-carbonated spring water, 

  • the juice of half a lemon, 

  • 2 teaspoons vanilla extract 

  • fresh violets for decoration 

 

4) Matcha Butter Cake

  • 3 eggs

  • 10 mL (2 teaspoons) vanilla extract

  • 30 mL (2 tablespoons) heavy cream

  • 1 tablespoon matcha powder

  • 120 grams (1 cup) flour

  • 1/2 teaspoon baking powder


    for decorating:

  • 1/2 teaspoon matcha powder

  • 1/4 cup powdered sugar

  • fruit and flowers, as desired
