No-Churn, Guilt-Free Coconut Matcha Ice Cream! (Naturally Dairy free & Gluten free!)

Here at MariMatcha Tea, we are obsessed with Matcha Ice Cream, which is why we love experimenting with healthy, guilt-free, ice cream recipes using whole, all natural ingredients! 

A new favorite of mine is this creamy and rich Coconut Matcha Ice cream. With no added sugar or heavy cream, not only does this recipe accent Matcha's natural earthy and sweet flavors but also supplies us with rich essential nutrients and fats! 

Ice cream that tastes great and is great for us? -- It sounds too good to be true! 

 

 

The great thing about this recipe is that you can use it not only for Ice cream itself, but also in smoothies, milkshakes, and so much more! Top in on a slice of Matcha Marble cake, or blend it with more Matcha, bananas, and chia seeds to make a creamy morning smoothie -- this recipe is so healthy that it doesn't even seem like a dessert!

So grab your warm cup of Matcha and get ready to feast your eyes, and tongue, upon this delicious Matcha ice cream!

Ingredients: 

  1. Full Fat Coconut Milk/Coconut Cream... 1 can. 

  2. Matcha Powder... 2 & 1/2 Tbsp
    (more or less depending on your preference!)

  3. Vanilla extract... 1 tsp

  4. Unsweetened Almond Milk... 1/4 cup 

  5. Pitted Dates.. 8oz

Directions: 

  1. Using a food processor, blend the pitted dates until they form into small chunks. Add a dash of hot water until the consistency is smooth and well-blended. 

  2. In a bowl, add the chilled coconut milk, vanilla extract, and date-mixture. (Only scoop the hardened coconut cream and reserve the liquid for another time). Sift in the Matcha powder and whip the mixture until well combined. 
    (Alternatively, use a blender to combine all of the ingredients. Taste the mixture to adjust the amount of Matcha to your liking!) 

  3. Pour the ice cream mixture into a freezable container and seal it shut. Freeze for about 5 hours.  

  4. Top with cacao nibs, walnuts, sweet adzuki beans, more Matcha powder, or anything else to your liking! 

    Now it's done! Pair with a fresh cup of Matcha and enjoy!
