Healthy Matcha Muffins (Gluten free!)

 

Whether they are for breakfast on the go or a mid afternoon snack, these protein-packed and nutritious Matcha muffins are to die for! The chia seeds add essential omega3s, while the Matcha gives the muffins a naturally earthy and nutty flavor -- plus the added antioxidants! Who wouldn't want to munch on these?

Let's check out the recipe!

~Ingredients~: 

  • Matcha Powder 1 tbsp

  • Oat bran... 1 cup

  • All Purpose flour (gluten free)... 1 cup

  • Almond flour... 1/4 cup

  • Coconut flour... 1/4 cup

  • Chia seeds... 3 tbsp

  • Baking powder... 1 & 1/2tsp

  • Baking soda... 1 & 1/2tsp 

  • Eggs... 3 medium 

  • Oil of your choice... 3/4 cup

  • Coconut sugar... 3/4 cup
     

  • Optional (choose according to your liking):

    • Lemon Wedges

    • Blueberries

    • Raisins

~Directions~: 

  1. Heat the oven to 375F and arrange the muffin cups in the muffin pan. 

  2. In a large mixing bowl, combine the Matcha powder, oat bran, all purpose flour, chia seeds, almond & coconut flour together.

  3. Add in the baking powder, baking soda, and continue mixing until well combined. 

  4. In a separate bowl, whisk together the eggs, oil and coconut sugar. Pour in and fold into the dry ingredients. 

  5. At this point, you can add what ever additions you may like! I preferably enjoy raisins with my Matcha muffins! 

  6. Scoop the batter into the muffin cups and bake for about 25 minutes or until slightly golden brown (The top of the Matcha muffins should caramelize and darken in color a bit) 

  7. Let cool and enjoy!
