Healthy Matcha Chia-Seed Pudding

 

One of my FAVORITE desserts is this Matcha chia-seed pudding- packed with protein, essential nutrients, and healthy facts, it's overflowing with omega-3s! It's creamy, earthy, and with a little bit of a crunch from the chia seeds, it can't be beat!

It's so easy to make and is also perfect for a quick and easy breakfast! If you are like me and love everything Matcha-related, you'll absolutely love this recipe!

Let's check it out! 

Ingredients: 

  • Greek Yogurt... 1 cup

  • Milk (regular or dairy-free)... 1 cup

  • Chia-seeds... 1/2

  • Vanilla Extract... a dash

  • Sweetener (optional)

  • Matcha Powder... a dash
     

Directions:

  1. In a bowl mix the greek yogurt with the milk and stir well to combine.

  2. Add in vanilla extract, sugar (if you are adding any), and chia seeds. 

  3. Mix to combine and let it sit in the refrigerator for 3-12 hours. The longer you let it sit, the softer the chia seeds and the thicker the pudding. 

  4. You can add the matcha either before or when you are ready to eat. If you add it before, it may darken a bit and lose its fresh flavor, which is why I add it right before I am about to dig in! 

  5. Top with nuts of your liking, fruit, and/or honey!
