Healthy Matcha Cake With Creamy Frosting -- Gluten Free

I always celebrate my birthday with a delicious Matcha Cake! -- Topped with a decadent cream-cheese frosting, this gluten free, rich, creamy, healthy, and super easy to make cake it to die for! 

Ingredients:

For the Cake:

  • Gluten Free All Purpose Flour - 1 cup
  • Almond Flour - 3/4 cup
  • Coconut Flour - 3/4 cup
  • Coconut Sugar - 3/4 cup
  • Baking Powder - 2 tsp
  • Baking Soda - 1.5 tsp
  • Matcha Powder - 1 tbsp
  • Table Salt - a dash

  • Eggs - 4
  • Oil - 1/2 a cup
  • Vanilla Extract - Dash
  • Milk (Dairy or non) - 1 cup

For the Frosting:

  • Cream Cheese - 1 Package
  • Butter - 1/2 Stick
  • Powdered Sugar - 2 Cups
  • Matcha Powder - 2 tsp 

Directions:

For the cake:

Preheat the oven to 350 degrees Fahrenheit. Butter two round cake pans and dust with an all purpose gluten free flour (my favorite is Bob's Mill!)

In a bowl, mix together the all purpose flour, almond flour, and coconut flour. Add in the sugar, baking soda, baking powder, salt, and Matcha powder. Mix well with a whisk until all clumps are gone. 

In a separate bowl, crack 4 eggs and whisk them well. Add in the oil, milk, and vanilla, and mix it all together. Fold the liquids into the dry batter and mix until even. 

Divide the batter into the two cake pans. Bake for about 20 minutes, or until a toothpick comes out dry when stuck in the cake. When the cakes are done, let them cool on a cooling rack until they are ready to be iced.  

 

For the Icing:

With a separate bowl, add in the cream cheese, powdered sugar, vanilla, and softened butter. Beat with either a manual or electric whisk until a soft peak form. Store in the fridge to let it harden if needed. 

Ice-slice-and-enjoy!
