Antioxidant-rich & Protein Packed Matcha Chia Seed Pudding!

One of my favorite breakfast, snacks, and desserts has to be this protein-packed Matcha chia-seed pudding! It's not only irresistibly creamy and chewy, but it's also overflowing with antioxidants and is full of anti-inflammatory omega-3 fats! Add a boost of health to your morning, or evening, with this easy to make chia-seed pudding recipe!

 

Antioxidant-rich & Protein Packed Matcha Chia Seed Pudding!

Prep time: 10 Minutes

Waiting Time: Overnight

Yields: 4 Servings


This Matcha Chia Seed pudding is overflowing with anti-aging antioxidants and anti-inflammatory healthy omega-3 fats! The fat-free greek yogurt and creamy smooth almond milk packs this yummy breakfast treat with loads of protein, guaranteed to leave you feeling satisfied without a crash!


Ingredients:


For The Pudding:

  • Greek Yogurt*... 2 cups
  • Almond Milk... 1 1/2 cups
  • Chia Seeds... 7 tbsps
  • MariMatcha Matcha Powder... 1 tbsp
  • Water... 1 tbsp

Toppings:

  • Pumpkin Seeds... for extra healthy fats & protein
  • Chopped Walnuts... for an omega-3 boost
  • Coconut Flakes... for a crunchy and slightly sweet twist
  • Coconut Sugar/Honey... to compliment the tang of the greek yogurt
  • More Matcha!... for an added Antioxidant boost!

*can substitute with non-dairy yogurt alternative such as coconut yogurt!

Directions:


 1. In a large bowl, mix together the greek yogurt and chia seeds. Stir until well combined.

    2. Add in the Almond milk little by little and continue to stir until the yogurt and milk are mixed well together.

      3. Cover and let sit for 3 hours or ideally overnight.
      4. Test the consistency of the mixture to see if it is to your liking. If you would prefer it to be  more liquidy, add more almond milk. 

      ~


      5. In a small bowl, dilute the Matcha with some room temperature water until it is smooth and silky. There should not be any clumps. 

       

      6. Pour the Matcha into each bowl (I divided the Matcha into two bowls - so 1/2 tbsp of Matcha for each) and mix it until fully combined.



      7. Top with pumpkin seeds, coconut flakes, honey, sugar, more Matcha, or anything else to your liking!
