Antioxidant-packed Matcha Blueberry Muffins (GF)

If there is one fruit I love to eat everyday, it’s blueberries! Why? Not only are they sweet, tangy, and slightly tart, but they are also overflowing with skin- rejuvenating and immune-enhancing antioxidants. And if there is one drink I love to drink everyday, it’s Matcha green tea!


So why combine these two delicious and nutritious superfoods into one amazing muffin: The antioxidant-packed blueberry Matcha muffin! These delicious make the perfect breakfast, lunch, snack, and even dessert!

Prep time: 15 Minutes

Bake time: 22 minutes

Yields: 12 Muffins


Ingredients:



  1. Oatmeal... 1 cup
  2. All purpose GF flour... 1 cup
  3. Almond flour... 1/4 cup
  4. Baking powder... 1 1/2 tsp
  5. Baking soda... 1 1/2 tsp
  6. Salt... a dash
  7. MariMatcha Matcha powder... 1 tbsp

  8. Eggs... 2
  9. Brown sugar, packed... 1/2 cup
  10. Coconut oil... 2 1/2 tbsp
  11. Coconut milk... 1/2 cup
  12. Blueberries... 1 cup

Directions:


  1. Mix the oatmeal in with the GF flour, almond flour, baking powder, baking soda, and salt. Stir until well combined.

  2. Add in the MariMatcha Matcha powder and mix until there are no clumps of Matcha.


  3. In a separate bowl, crack and beat the eggs with the brown sugar. Add in the coconut oil and coconut milk and mix well.


  4. Lastly, fold the blueberries into the batter. For this recipe, I used frozen blueberries, but fresh blueberries work just as well!



  5. Scoop into a muffin tin and bake in the oven at 350 for about 22 minutes.

  6. Let cool slightly before serving!

  7. Enjoy with a delicious and antioxidant rich cup of MariMatcha!
